The Forest Kitchen is my dream come true. A food forest mature enough to allow me to offer fantastic meals using forest plants, ancient recipies, the freshest seafood and meats cooked underground 18 hours in a 1000s years old traditional way.
What's on the menu? I do not know yet. I get whatever is seasonal, beautiful and available at the farmers market and the catch of the day from Puntarenas market. n ever changing menu with the nicest products available that day.

70% plant based menu made the vegan guests really happy.
The catch of the day we did Aguachile with shrimp and tuna tartar, plus a fish dip called Minilla.
And in our PIB, a 2,5 meter deep underground oven, we did Cochinita Pibil, a maya style pulled pork with citrus and spices, and an Osobucco with a forest plant called Acuyo.
Amazing.
A Chefs dream come true.
